mexicanaThis was my first attempt at a basic no additions K&K. Added 300g LME + 800g dextrose + fermented with kit yeast at 20-22C for 10 days. Bottled and left for 4 weeks. First impressions are it's a little bland, very mild sweetness, low bitterness, body and head ok for a kit. A slight cider after taste which is disappointing, especially since the style is very subtle. I suspect due to yeast and 22C fermentation. Don't think I will get through this quickly if at all. It needs some finishing hops and a decent lager yeast. |

Simple Pale AleCan + Coopers Brew Enhancer 2 + I decided to culture yeast from 2 stubbies of CPA into a 1L starter for 2 days. At full krausen I dumped it into the mix. Also boiled 20g Pride of Ringwood hops for 30mins and 10g at flame out. Primary for 18 days at 19C, SG 1049 FG 1009. After 3 weeks in the bottle it's nicely carbonated but lacks head and tastes a little on the weak side. It does show hints of the classic CPA, mostly I think due to the PoR addition, but the 500g of dextrose in the BE2 hasn't helped. I would do the mix up to about 20L and probably just add 1kg of light malt instead of the BE2. |
